Founded in 1705, Sugiyama Jusando is known as the originator of morokoshi, Akita's traditional pressed sweet made from azuki bean flour and sugar. Its name is said to come from praise by the lord of the Akita domain, and the shop still makes the confection by traditional hand-pressed methods today.
