Founded in 1868 as a dumpling stall near Ana Hachimangu shrine, Yahata-zushi became a sushi restaurant in 1915. It is celebrated as the birthplace of the kappa-maki cucumber roll, invented by the fourth-generation owner during postwar food shortages.
