Founded in 1834 as a salt and miso merchant, Mitsutaya continues its miso-making tradition in Aizu-Wakamatsu. In the storehouse dining room, skewers of konnyaku, mochi and herring are brushed with the shop's secret miso sauces and grilled one by one over an open hearth.
