The Nagasaka Sarashina name traces back to the original Edo-period Sarashina soba shop opened by Nunoya Tahei in Azabu Nagasaka-cho. After a wartime closure, the Kobayashi family revived it as a company in 1959, and it now operates numerous locations centered on its Azabu-Juban main store.
