Founded in 1868 in Yokohama, Ohta Nawanoren is the birthplace of gyunabe, the miso-simmered beef hotpot created by founder Otokichi Takahashi. Chunky cuts of beef cooked in a shallow iron pan over charcoal carry the flavors of Japan's port-opening era to the present day.
