Founded in 1653 as a fishmonger, Sushiman became a suzume-zushi specialist in 1781 and is the oldest surviving Osaka-sushi house. Its signature kodai suzume-zushi, pressed sushi of small sea bream, is sold for takeaway at the Utsubo-honmachi main store.
