Founded in 1920 by a bonito-flake dealer who moved to Tokyo from Nagoya, this shop specializes in katsuobushi and kelp products. Its additive-free flakes and white dashi have earned wide recognition, including a feature on NHK, and it also runs its own soba restaurant.
